Hehe yeah, Morrowind is pretty huge, both in terms of geography (though its predecessor, Daggerfall, actually has the biggest game world of the series so far) and content - there are all sorts of tombs and ruins and houses and stuff all over the place that have nothing to do with any quest, they're just there for you to find and explore, kill any bad guys and get whatever loot is stashed in there...though as the level of a place is set from the first time you enter it, it can be a good idea to do the majority of your exploring when you're somewhat of a higher level, so the loot is better (grand soul gems, hello!)
. I also like Morrowind because you can become ridiculously uber and basically unkillable purely through having enough knowledge of the various mechanics in order to create various spells and enchantments to give yourself whatever abilities and powers you could want

Skyrim is geographically tiny compared to Morrowind (Oblivion was pretty small, too), but is still packed with content. And I like how stealth works - I can basically one-shot
anything if I can manage to sneak up on it and get in a melée attack without it noticing, otherwise just slowly plink away at it from a distance and move if it comes looking for me
. But I don't like the UI of Skyrim, it's a pain in the arse and I would much prefer the Morrowind one (sadly I have checked and there doesn't seem to be a mod to change the Skyrim UI to the Morrowind one, thogh someone has made a mod to change it to be like the Oblivion one...which I also didn't like very much
).
And I also don't like the stupid quest markers that pop up whenever you get a quest, both on the map and even more so the really horrible immersion-breaking ones that come up
in the game world which I turn off as soon as I start a new game. At least those
stay turned off - whenever you get a new quest, it always activates the map marker for that quest. But because quest descriptions are more in the format of "Talk to X person who is at Y" (with no directions given, unlike Morrowind which filled in a proper journal entry with lefts and rights or compass directions or whatever) and you may not yet know where "Y" is, I do leave the marker on just to se where I should be heading...then turn it off once I know where I need to go

I replay Morrowind every couple of years or so. Skyrim I recently finished my second playthrough...though my first one was not too long after it came out so there were no expansions at that time - this time around I have
all the expansions so have now played through them as well and really enjoyed Dragonborn, largely because a decent part of it was like a massive nostalgia trip into Morrowind (it even reuses a lot of the music)

It will be interesting to see what Argonia (Elder Scrolls VI) is like - I've heard they are going back to a more Morrowind-like engine or something...but I think that's not due out till something like 2018 so we have a bit of a wait for it yet

I've heard the Witcher III is really open-worldy with many many
many quests and a huge world - have you checked that out? I've not really looked into it. I played the first game for a while, then got distracted by other stuff and never went back to it
