Gambit or cows, can you tell me how to do some of the deeper admin stuff like links changing or the forum backup or new icons, etc?

Sure, if you have a few hours spare
It's the kind of thing that's two way -- would be better to give you some training via messnger or something.
For new icons, skins, etc, you need to edit templates and the like. Get's fun (or not, depending on your predilection for coding).

I've just taken a full longhand uncompressed SQL backup and it's 48 megabytes.
