I've been fiddling with WALLITEM_COUNTERS and either I am using them incorrectly, or they are buggy.
I have 4 floor triggers each of which only responds to one type of food. Each trigger targets the counter, so when all 4 pieces of food are on the same tile, the counter should count to 4 and open a door.
However, the counter only seem to work if its associated action is DEACTIVATE. If it's TOGGLE or ACTIVATE, the counter performs the action before the count has been reached.

Have a look at the counters at the start of the skeleton / beholder level in DM (the bit with the bow, mirror of dawn, gem and gold coin). The functionallity there seems to be exactly what you want. If it isn't, let me know and I'll investigate this further.
