Back to thieves' abilities - the games i played it was always from both hands, which seems fair they could steal from either
The whole body thing (and stairs following you up, of course) were both implemented in DMJava and bugged me. The stairs is logical, but the thief stealing form anywhere bugged me no end
Of course, there is a difference between stealing from anywhere, and just stealing from your pouch and quiver...that might be cool to see (as an engine option, not on the original thieves, gigglers, call them what you will!)

What do DM2 stealers do....i seem to recall they were much more annoying...

Can't remember...think they could still only steal from one hand (I remember having my Tech Shield nicked or something) but they can hurt you (albeit not much) with a dagger attack. They also have a kind of stash area where they go and dump the stuff they've nicked - once you've opened the Lightning door they come running round the area with the shops by where you start the game, using the corner roughly opposite the safe door (the one into the safe room with the table and the alcove behind the sun tapestry and all that) as their stash area. A bit annoying but by that time they shouldn't be too hard to deal with all the same. At least you can hear them coming.

It has been dicovered in CSB4win that yes, the giggler originally only stole from the left hand

However, there was provision for it to b) steal from the right (implemented in amiga and PC, because i've never known it to be different) and also head, torso, leg, foot, quiver, pouch, and backpack!
These are coded into the original engine, but most never used
