Also following "flags" will be good:
if (and how good) can monster see, hear and sniff, for example rats should sniff party far away from direct eye contact. Try to imagine you are entering some room and because intellingent monsters inside knew you will came (they have heard you), they are hidden in the surrounding corridors and suddenly will attack the party... sounds pretty good to me!

Could some of them gradually become desensitized to war cries or similar actions?

And of course let's not forget about monsters who are friendly or neutral until the party does something offensive, like the vexirks (jawas), guards, and shopkeepers in DMII.

Another idea - if there are inanimate blocking objects like tables, why not statues, which of course might be able to "come to life"...

All of it? Different senses?
And do monsters now desensibilize vs. fear as suggested above always, or is that optional only for custom dungeons? Such monster behaviour might be bad for some existing puzzles.
